The other 5 recipes use a combo of baking powder and baking soda. JW and MH add cornstarch and skip baking powder. Broma, BEB, JW, and MH use more brown than white sugar. Delish, CJ, and Bravetart (close enough) use a 1:1 white to light brown sugar combo-Bravetart recommends toasted white sugar which I did. Bake Time: everything from 9 to 26 minutes.Įach recipe uses a combo of white and light brown sugar.Chill Time: MH requires no chill time, Bravetart calls for at least 12 hours and everyone else is somewhere between 30 minutes to an hour and a half.Walnuts: Broma leaves them out entirely, Bravetart calls for untoasted walnuts or toasted pecans, MH doesn’t call for toasting.Chocolate: 6 recipes call for chips–JW calls for chopped, 4 recipes call for dark chocolate–CJ calls for milk, Bravetart an assortment and MH doesn’t specify.Eggs: 6 recipes call for 2 eggs, JW calls for 2 whole + 3 yolks.Butter: 5 recipes called for cold cubed butter while JW calls for melted and Bravetart calls for softened.BEB uses only bread, Bravetart uses on AP, CJ uses a combo of AP + self-rising flours, the other 4 use a combo of AP + cake flours. Types of flours: bread, cake, AP, and self-rising all make an appearance. ![]() There are several, I think, major variables: I chose to do these two basically identical recipes to mostly see the differences, if any, between the two flours. Broma also recommends chilling for 30 minutes to 12 hours while BEB gives a hard and fast 30 minute chill time. Most notably Broma calls for AP flour instead of bread flour and no walnuts. Broma attributes her recipe to BEB and with a few tweaks included. Note 2: Broma Bakery and Brown Eyed Baker’s recipes are basically the same. I was interested in repeating her recipe and comparing it to the others to see where it fell in the rankings. Note 1: I made Modern Honey’s recipe last year and very much enjoyed it. I chose this assortment because some of these bakers I already follow and also because they gave me a wide assortment of variables to “test.” Here were my contenders: Joshua Weissman (JW), Cupcake Jemma (CJ), Broma Bakery (Broma), Brown Eyed Baker (BEB), Modern Honey (MH), Bravetart, and Delish. I used Ghirardelli 60% bars to chop for Joshua Weissman’s recipe, Ghirardelli milk chips for Cupcake Jemma’s, and a mix of Market Pantry semi-sweet mini chips, Ghirardelli Grand semi-sweet chips and Guittard extra dark chips for Bravetart’s. The chocolate was Ghirardelli 60% chips for all the recipes that called for dark chocolate chips. The flours were Gold Medal AP, Softasilk Cake Flour, Pillsbury Best Bread Flour and Martha White Self-Rising flour. ![]() ![]() If you prefer, you can live chat online, leave a message or request a callback by clicking the relevant link in the website footer. ![]() When you’ve got a question about L.L.Dean’s products or an ongoing order, send a call through to 80. Update Nov-2012: The price has skyrocketed to $10.95 per bottle and there is no discount for buying a full case. There's no requirement that the listing of ingredients can't include components that are generally recognized as safe.I found this very detailed review on Amazon, which also has the best price around for a case of 12 bottles of SI-1 (currently $74/case with free shipping, or $6.12 per bottle). I don't think they list PEA as a hazardous ingredient. The bottle costs far more than the contents. Mineral spirits? Naptha? Pale oil? No wonder there are so many additives on the market - they're about 99.99867% pure profit. Then, think about the cost of the ingredients. One other thing struck me: Think about the price of a bottle of additive. He could not tell me the concentration % due to legal and trade secrets but he could say that the concentration CAN NOT be beat by any other product available today and they did not reduce the amount of PEA in it. Holding more than 100 issued patents, Dr. Perlman worked as a Fellow at Sun Microsystems. She joined Intel Corporation in spring 2010 as an Intel Fellow and is responsible for ensuring Intel Labs' leadership in network and security. She invented the spanning-tree protocol, which is fundamental to modern Ethernet, and scalable and robust link state routing technology that is crucial to the operation of today's Internet. Radia Perlman is an IEEE Fellow, a software designer and network engineer. Instead of expecting humans to adapt to an interface slapped together by engineers, engineers should strive to create a system that is designed for humans in their natural form.ĭr. When engineers just love this stuff design something, we wind up with a system that asks an innocent person attempting to install email, "Do you want POP or IMAP?" One common comment engineers make is that we need "more user training". Though, I've learned that some people like to configure things, so I usually design in knobs for them to play with, and perhaps improve things, but any setting of the knobs will still work correctly. Things will just work, and be self-managing. The stuff I design, if I'm successful, nobody will ever notice. Then I'd have her friends calling me up and saying "when I try to configure a printer I get this error message." I had to explain to my daughter that, yeah, although I'm considered an expert at this esoteric thing called network protocol design, I wasn't likely to be able to help her friends at anything practical.īut the world would be a better place if more engineers, like me, hated technology. When my daughter was in high school she told her friends proudly that her mother "had a PhD from MIT and knew all about computer science". Is your love for technology what inspires your work?Īctually, I hate technology! There are some people who love gadgets, love using them, love taking them apart and tinkering with the insides. You have transformed the technology industry several times with the spanning tree that transformed Ethernet, with link state routing, and with TRILL. ![]() I believe that understanding design tradeoffs and alternatives will be far more beneficial than memorizing the details of one protocol suite, and will enable the students to think critically, and will increase their ability to design new things. Instead, I believe students should be taught the concepts, such as "how would one acquire a network address without being configured", and then study a bunch of different approaches that could exist, or have existed in other protocols. Rather than approaching it as a science, students are merely told to memorize the specifications of the existing deployed devices. ![]() I get frustrated with how networking is taught in many places. What changes do you think need to be made to the way engineers and computer scientists are taught? Many network protocol designers learned the field from your books, and keep a copy on their bookshelves. And, try to think about and understand various approaches, and the tradeoffs between various choices. This is a combination of "what customers are asking for", "what customers don't even know they want yet" and "what can be solved with something simple to understand and manage". Start out with finding the right problem to solve. What advice would you give to fellow engineers? TRILL will fix these problems, but do it in a way that is completely compatible with everything. While spanning tree-based Ethernet was popular because of its simplicity and ability to self-configure, it didn't make optimal use of bandwidth, and was, for subtle geeky reasons, somewhat fragile. ![]() Ironically, one of the things I've been working on these days is replacing the spanning tree with a new technology, being standardized in IETF, called "TRILL" (Transparent Interconnection of Lots of Links). ![]() |
